Pork and Bell Pepper Stir-Fry
1. Ingredients
*1 pound boneless pork loin
*3 tablespoons cornstarch
*3 tablespoons vegetable oil
*1 bunch scallions, trimmed and sliced into 1-inch pieces
*4 cloves garlic, finely chopped
*2 eggplants (about 1 pound), cut into 1-inch cubes
*1 red bell pepper, cut into 1-inch pieces
*1 cup chicken broth
*1/2 cup store-bought stir-fry sauce
2. Directions
1. Cut the pork into 1/4-inch-thick slices, then cut the slices into 1/4-inch-thick slivers. Toss with 2 tablespoons cornstarch.
2. In a large skillet, heat 1 1/2 tablespoons oil over mediumhigh heat. Add the scallions and garlic; cook, stirring, until golden, about 2 minutes. Add the pork and cook, stirring, until just no longer pink, 3 minutes. Transfer to a bowl.
3. Add the remaining 1 1/2 tablespoons oil to the skillet, add the eggplant and cook, stirring, until slightly softened, about 3 minutes. Add the bell pepper and cook, stirring, until crisp-tender, about 2 minutes. In a small bowl, stir together the chicken broth, stir-fry sauce and remaining 1 tablespoon cornstarch; pour over the vegetables and cook, stirring, until the sauce is thickened, 1 to 2 minutes. Return the pork mixture to the skillet and stir until heated through, 1 to 2 minutes.

Halloween Costumes
Halloween is approaching and you know what I'm planning to buy my kids a Halloween Costumes this time. Last time I felt sorry for them I couldn't buy them a Halloween costumes because I didn't have lots of money to spend. Our breakfast
This is what we ate for breakfast this morning, aren't they look yummy? Boy, it was very delicious we liked it except Sarah she didn't like it. I don't know why but it seems like she doesn't like doughnut's. This morning I gave her one and she just took a very small bite and left the rest hehehe. What a rainy day
It's been raining here a lot today since in the morning until noontime and really we got a lot of rain on our ground. We thought we were going to have a small flood for a while. Thankfully it didn't rain too much longer. I think it stopped raining about 12:00 or 1:00 in the afternoon. Glad it stopped raining because if not we maybe could have a flood here today lol. Anyway, after the rain stopped my husband and father in law went to Sam's store to buy diapers, baby wipes, potato chips, and batteries for my camera. He couldn't buy the sour cream because they didn't have a small box of our sour cream. My husband said they only got about half a gallon of sour cream. So, he didn't buy because it will probably go bad before we can eat it all lol. I was sad for knowing that he couldn't buy the sour cream because I really need some sour cream for the potato chips. But, I understand his reason for not buying it so I didn't become angry with him. I have been so very nice with him because I know how hard his jobs are and I didn't want to hassle him. I did a lot of cleaning too today, I washed the dishes, I vacuumed the floor from our bed room to front room, kitchen, and to Sarah's room. Then I cleaned Sarah's bed so that she can start sleeping in her bed. Actually she's sleeping in her own bed now tonight is her first time sleeping in her bed so I hope she'll like it. This is the car we want to trade 4 our car
This car is black color with gray interior, we went there and looked at it yesterday. In fact my husband and I drove it around in town yesterday and we think this car is fine to trade for our car. According to my husband our car is much better compare to this one. But, so that we can save money by buying battery and breaks we are going to trade our car to this car this weekend. For me, I don't care if we trade our car or not. Their both fine so I am not against about it. Enjoy your day.

It's been raining here
It's been raining here a while ago, but it wasn't a lot of rain. It was only a very small amount of rain just enough to wet the top of the ground. So, now the soil is all wet and muddy yikes. I don't like it when it rains because the soil will become wet and it's kind of nasty outside. But, I think for the farmer people they like it when it will rain because it helps their plants to grow well and fast. Anyway, nothing much to say to say here. Have a happy Monday!

Happy Monday everyone
Well it's Monday again, the first day of the week. But anyway, how was your weekend go? Did everybody have fun? as for us our weekend was fine, we went shopping on Saturday and we just stayed home the whole day yesterday because as always my husband have too much assignments to do for School. We thought when he becomes a teacher it would be much easier for him. But yikes there's so much paper work for him to do almost every weekend. In fact yesterday he woke up and got up about 2am in the morning to start working on his paper work. It was a lot but finally he got done working on his paper work about 5pm lol. It took him whole day but the good thing we grilled out brats, chicken and fish so we had a nice dinner. He was happy after all and he had the whole night to do whatever he wants to do.

Too much to do
Yesterday was a labor day but we didn't do anything because we celebrated our labor day on sunday instead of monday. We celebrated it in advanced because my husband had too much to do at the school yesterday. He went there yesterday by himself to do his assignments. We wanted to go with him but he said no because he can't concentrate with his work with our kids screaming and crying. So he went there by himself and yeah he got some work done but not everything. He still have some works to do this week or this weekend. But hopefully he can finish everything he wants to do this weekend, because boy he always have too much to do all the time and he don't have enough time to do it all. We're just too busy right now especially my husband but I hope it will get easier for all of us eventually. God will guide and Bless us all.
